Roasted Cauliflower Quinoa Bowls
Serves 4
Ingredients
- 2 Tbsp avocado oil, or other neutral oil
- 2 Tbsp Monte Creek Harvest Seasoning Blend
- 1 medium cauliflower, cut into bite-sized florets
- 1 can chickpeas, rinsed, drained, and patted dry
Instructions
- Preheat oven to 425°F (220°C).
- Combine cauliflower, chickpeas, avocado oil, and seasoning blend; toss to coat.
- Roast for 35–40 minutes, until golden and crispy.
Red Onion Salad
- Juice of 1 lime
- 2 Tbsp avocado oil
- 1 Tbsp apple cider vinegar
- 2 tsp Monte Creek Harvest Seasoning Blend
- 1 small red onion, thinly sliced
- ½ cup roasted pumpkin seeds (pepitas)
- ½ cup chopped cilantro
Combine all ingredients and set aside.
To Serve:
- 2 cups cooked quinoa
- 2 avocados, sliced
Assemble bowls with cooked quinoa, roasted cauliflower and chickpeas, and marinated red onions. Top with avocado slices, extra pepitas, and cilantro as desired.
Serve with Living Land Riesling or Living Land Pinot Noir for a perfect pairing.
💡 The Harvest Seasoning Blend is also excellent on grilled vegetables like zucchini and eggplant!
Honey Chicken Skewers
Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 2 Tbsp avocado oil, or other neutral oil
- ¼ cup 2022 LL Riesling
- 2 Tbsp Monte Creek Harvest Seasoning Blend
- 2 Tbsp honey (or hot honey, if desired)
- 5 bamboo skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine avocado oil, Riesling, seasoning blend, and honey. Add chicken pieces and mix to coat.
- Marinate in the refrigerator for 30 minutes.
- Thread marinated chicken onto soaked skewers.
- Grill or air fry for 10–15 minutes, turning occasionally, until cooked through.
Serve with a glass of 2022 Living Land Riesling — perfection!
