Did you know we have two 1000 L Nico Velo concrete cubes?!

The two cubes are red fermenters which have large doors that make for easy access for punch-downs. Much like our eggs, the concrete cubes provide many benefits to winemaking such as micro-oxygenation, neutral flavour, and bright, fruit-forward flavours.


Concrete is also a natural insulator that can adapt to heat and cold. This allows for gradual fermentation without temperature spikes, which is especially important for wines made without commercial yeasts.

We primarily use these for our Pinot Noir.
